Potato pancakes from sweet potatoes – sweet potatoes

INGREDIENTS

Sweet potato pancakes – bataty:

    • 2 medium large sweet potatoes (800g)
    • 1 onion
    • 2 eggs
    • 2 tablespoons of flour or breadcrumbs
    • salt for taste
    • pepper to taste
TIPS

Sweet potato pancakes:

1. Peel sweet potatoes and onions.

2. Rub off, wrap in gauze or a kitchen towel, wrap the gauze in a bag and squeeze out any excess fluid.

3. Transfer to a large bowl, add salt, pepper, flour and beaten eggs. Mix well.

4. In a large frying pan, heat the oil over medium heat. 2-3 tablespoons of the potato mixture lightly flatten with a spoon in hot oil.

5. Fry 3-4 minutes on each side or until golden brown. Put them into paper towels to dry and season with salt.
