French tortilla

A guy comes to a pub and orders a tortilla. The waiter asks: "Spanish or French"? "Does not matter, I will not talk to her ", the customer responds.

The above joke may be silly, but it is often cited in Spain. It refers to two dishes, which are available in every bar and eaten in practically every home.

In Poland, the word "tortilla" is mainly associated with a corn cake, however, in fact, the name is used not only for the Mexican counterpart of our bread, but also to dishes similar to omelettes, popular in Spain (and despite the fact that they are technically not omelettes, even in Galician omelet).

Omelette, meaning French, it is easier to prepare and is usually eaten as a quick dinner, or a light breakfast. Spanish tortilla it is much heavier, a filling dish, usually eaten for dinner or served as a side dish. It was the former that I had recently served myself for dinner.

Ingredients for 1 portions:

  • eggs – one large or two smaller
  • sausage – a slice or two
  • cheese – one slice

We start by putting a frying pan on the burner (best 22 or 24 cm). Throw in a little lard or clarified butter, as someone preferes. Beat the egg into the plate and keep mixing until the white and yolk are well mixed. Add a little salt and pour it into the pan, so, so that the egg is evenly spread over the entire surface of the pan. We put the sausage and cheese on the egg immediately. We are waiting for a while, until the cheese begins to melt, then roll up the edges of the tortillas on both sides, folding it lengthwise in three. The "roll" created in this way is put on a plate. Serve with a slice of bread.

Rolling up the edges of the tortilla may take some practice – for starters, it's easier to use two spatulas or help yourself with a fork (which we will use to eat anyway). It also happens, that the tortilla is only folded in half – it is only important, to close the sausage and cheese between the egg layers.
