A third sous-vide approach for the thrifty. Lamb this time. We are developing slowly, previously I bought meat already wrapped in foil, no this time - so I had to buy zip bags. I was a little concerned about the process of removing air from the purse, but it was much easier than expected. It is enough to slowly dip the bag in the water, the air escapes by itself. Anyway, it turned out, that if there was some left over, it's gonna be okay, it will collect at the top of the bag, which ideally will float in the water like a float.

The big advantage of self-"bagging" is the ability to season the meat before cooking. I added some oil, which facilitated the removal of air, salt with juniper and rosemary. It was really felt in the ready dish, although much more could be added.

I was writing, that if we leave some air, the pieces of meat will float like floats in water. In practice, such balancing is not easy. Most of the handbags are sinking, adhering flat to the bottom or to one side, what can cause, that the meat does not reach the required temperature. You can "mix" them from time to time, but uncovering the cover is a drop in water temperature… What's worse, somehow I wasn't sure, that the bags are tight. So I came up with the idea of ​​"hanging" them on a jewelry wire. Because they are roughly the density of water, the role of the wire is to keep them upright, at relatively equal intervals from each other. The seam of the bag is above the water, even if it is open, nothing terrible will happen.

We carried out the entire operation in the bathroom, not in the kitchen, hence these tiles. This is what lamb looks like when cooked.

And so after frying in a pan. This last step is not very simple: you must have a really hot pan and well drained meat, that it turned brown quickly (and it didn't overcook too much).

Really enjoyable, fruity pinot, as smooth as a baby's bottom with only a slight rash, without any complications, backyard notes and the like. And only 12,5% alcohol. Kupiłbym jeszcze. ♥♥+
