Ingredients:

Pancake batter:

    • 1 a glass of milk

  • 2 glasses of flour

Stuffing:

  • 500g of fresh spinach or 200g of frozen spinach
  • 200g of cottage cheese or feta cheese or 100g of yellow
  • 1 a small onion
  • 1 clove of garlic
  • 1 a pinch of grated nutmeg
  • half a teaspoon of dried basil
  • salt
  • white pepper

Preparation

The first thing we do is chop the onion finely. If our spinach leaves are large, we need to cut them into smaller pieces. Glaze the chopped onion in a little butter or in oil, then add scalded and pressed spinach, then add very finely chopped garlic and continue to glaze over low heat. When the garlic is soft, mix it, we increase the fire and evaporate, while evaporating, the whole thing is shredded with a wooden spatula.

Season the stuffing with salt, white pepper, as well as a little nutmeg, we also add cheese, maybe cottage cheese, feta cheese or yellow cheese. You can also add a little dried basil to the stuffing. Mix everything and leave it for a while on medium heat so that all the ingredients combine into one stuffing. In the meantime, fry the pancakes. Put hot stuffing on the fried pancakes and wrap them up.

Pancakes can be decorated with cream or basil. Before decorating, you can also sprinkle with grated cheese and bake by putting it in the oven for 15 minutes.
