The Uzbek way of making tea

The Uzbek way of making tea: In Uzbekistan, green tea is the national drink, which is drunk in all regions and cities of the republic, except Tashkent, where black tea is mainly used. For making Uzbek green tea, it should be poured into a well-heated porcelain kettle, taking 1 teaspoon per person + 1 teaspoon on the kettle. Then it is poured over it with a small amount of boiling water (no more than 1/4 kettle capacity) and places the kettle in the stream of hot air (for example, in the oven), but not directly on fire. Then boiling water is poured up to half the volume of the vessel, cover with a napkin and pour boiling water over the top 2-3 min. Then it is poured into 3/4 kettle volume, held for further 3 min. and finally tops it up.

Uzbeks - especially in the Autonomous Republic of Karakalpath - also drink tea with pepper, honey and milk, in these cases they use black tea.

Tea with pepper: It is prepared like ordinary black tea, adding for each teaspoon of dry tea 2 grains of crushed black pepper.

Tea with black pepper and honey: For every teaspoon of black tea is taken 2 teaspoons of honey and 2-3 peppercorns. All this set is thrown into the kettle and brewed in the usual way.
